Breakfast Rolls

Ingredients
  

2 cups all-purpose flour

1 teaspoon instant yeast

1/2 teaspoon salt

3/4 cup warm milk (about 110°F)

2 tablespoons sugar

2 tablespoons unsalted butter, melted

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/4 cup Greek yogurt

1 teaspoon garlic powder

1 teaspoon onion powder

1 egg, beaten (for egg wash)

1 tablespoon sesame seeds (for topping)

Instructions
 

Prepare the Dough: In a large mixing bowl, combine the flour, instant yeast, and salt. In a separate bowl, mix the warm milk and sugar until dissolved, then add the melted butter. Gradually pour the milk mixture into the dry ingredients, stirring until a soft dough forms.

    Knead the Dough: Transfer the dough to a lightly floured surface. Knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm area for about 1 hour, or until doubled in size.

      Prepare the Filling: While the dough rises, sauté the chopped spinach in a pan over medium heat until wilted. Remove from heat and let cool slightly. In a bowl, mix the wilted spinach with feta cheese, Greek yogurt, garlic powder, onion powder, salt, and pepper to taste.

        Roll the Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately 12x15 inches in size. Spread the spinach-feta filling evenly over the dough.

          Shape the Rolls: Starting from one of the long edges, tightly roll the dough into a log. Pinch the seams to seal, and slice into 10-12 equal pieces.

            Second Rise: Place the rolls on a lined baking tray, cut side up, spacing them about 1 inch apart. Cover them with a cloth and let them rise for another 30 minutes.

              Preheat Oven: Preheat the oven to 375°F (190°C) while the rolls are rising.

                Egg Wash and Bake: Brush the tops of the rolls with the beaten egg and sprinkle with sesame seeds. Bake in the preheated oven for about 20-25 minutes, or until golden brown and the rolls are cooked through.

                  Cool and Serve: Remove the rolls from the oven and let them cool slightly on a wire rack. Serve warm or at room temperature for a delightful breakfast treat!
