4 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 cup shredded sharp cheddar cheese

1/2 cup crumbled goat cheese

1/4 cup fresh spinach, roughly chopped

1/4 cup sun-dried tomatoes, chopped

1 teaspoon garlic powder

Salt and pepper to taste

2 large eggs

Optional: Hot sauce for serving

Prep the Bread: Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread. This will help achieve a beautiful golden crust when grilled.

    Cheese Mixture: In a bowl, combine the shredded cheddar cheese, crumbled goat cheese, chopped spinach, sun-dried tomatoes, garlic powder, salt, and pepper. Mix well to combine all ingredients evenly.

      Build the Sandwich: Take two slices of bread, buttered side down, and evenly distribute the cheese mixture on top. Place the other two slices of bread on top, buttered side facing out.

        Cook the Eggs: In a non-stick skillet, cook the two eggs to your preference (scrambled, fried sunny side up, or over-easy). Once cooked, set aside.

          Grill the Sandwiches: In the same skillet, over medium heat, place the prepared sandwiches. Grill until the bread turns golden and crispy, about 3-4 minutes. Carefully flip the sandwiches and grill the other side for another 3-4 minutes, or until the cheese is melty and gooey.

            Assemble the Breakfast: Once the grilled cheese sandwiches are done, remove them from the skillet. Cut them in half diagonally. Layer the cooked eggs on one half and top with the other half of the sandwich.
