4 large flour tortillas

6 large eggs

1 cup cooked and crumbled chorizo sausage (or breakfast sausage)

1 cup shredded sharp cheddar cheese

1/2 cup diced bell peppers (red and green for color)

1/4 cup diced red onion

1/4 cup fresh cilantro, chopped

1 avocado, sliced

1/2 cup salsa (optional)

1 tbsp olive oil

Salt and pepper, to taste

Sour cream (for serving, optional)

Instructions
 

Cook the Sausage: In a skillet, heat olive oil over medium heat. Add the chorizo (or breakfast sausage), breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.

    Sauté Vegetables: In the same skillet, sauté the diced bell peppers and red onion for about 3-4 minutes, or until they are slightly softened. Add salt and pepper to taste.

      Whisk the Eggs: In a bowl, crack the eggs and whisk them together. Season with salt and pepper.

        Scramble the Eggs: Pour the eggs into the skillet with the sautéed vegetables. Cook over medium heat, stirring frequently until the eggs are fully cooked and fluffy, about 3-5 minutes.

          Combine Ingredients: In a large bowl, combine the cooked chorizo and egg mixture. Add the shredded cheddar cheese and fresh cilantro. Mix until well combined.

            Assemble the Burritos: Place a tortilla on a flat surface. Spoon about 1/4 of the filling in the center of the tortilla, top with a couple of slices of avocado and a tablespoon of salsa if desired.

              Roll the Burrito: Fold in the sides of the tortilla over the filling and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.

                Toast the Burritos: (Optional) Heat a clean skillet over medium heat and place the rolled burritos seam-side down to lightly toast, about 2-3 minutes per side until golden brown.

                  Serve: Slice the burritos in half and serve with sour cream and extra salsa on the side, if desired.
