Ingredients

For the Crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ tsp salt

½ cup unsalted butter, melted

1 large egg

For the Blueberry Filling:

2 cups fresh or frozen blueberries

¼ cup granulated sugar

2 tbsp cornstarch

1 tbsp lemon juice

1 tsp vanilla extract

½ tsp cinnamon (optional)

For the Crumb Topping:

1 cup all-purpose flour

½ cup rolled oats

¾ cup brown sugar, packed

½ tsp cinnamon

½ cup unsalted butter, softened

Instructions

Prepare the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

Make the Crust: In a large mixing bowl, combine 1 ½ cups flour, ½ cup sugar, and ½ tsp salt. Add in the melted butter and the egg, then mix until all ingredients are well combined and form a dough.

Press the Crust: Press the dough evenly into the bottom of the prepared baking pan. Use a fork to poke a few holes in the crust to prevent bubbling. Bake in the preheated oven for 15 minutes or until lightly golden.

Prepare the Blueberry Filling: While the crust is baking, in a medium saucepan, combine the blueberries, ¼ cup sugar, 2 tbsp cornstarch, lemon juice, vanilla extract, and cinnamon. Cook over medium heat, stirring gently, until the mixture begins to bubble and thicken (about 5-7 minutes). Remove from heat and set aside to cool slightly.

Make the Crumb Topping: In a separate bowl, combine 1 cup flour, rolled oats, ¾ cup brown sugar, and ½ tsp cinnamon. Cut in the softened butter with a fork or pastry cutter until the mixture resembles coarse crumbs.

Assemble the Bars: Once the crust is baked and slightly cooled, pour the blueberry filling evenly over the crust. Sprinkle the crumb topping generously over the blueberry layer.

Bake: Return the pan to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the filling is bubbly.

Cool and Serve: Allow the bars to cool in the pan on a wire rack for at least 30 minutes. Once cooled, lift the bars out using the parchment paper (if used) and cut them into squares or rectangles.

Enjoy: Serve as is or with a dollop of whipped cream or vanilla ice cream for an extra special treat!
