Blueberry Lemon Yogurt Loaf

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup plain Greek yogurt

Zest of 1 large lemon

1 ½ cups fresh blueberries (preferably rinsed and patted dry)

For the Glaze:

1 cup powdered sugar

2 tbsp lemon juice

1 tsp lemon zest

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes using a stand or hand mixer.

        Add Eggs & Flavorings: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract and lemon zest.

          Combine Mixtures: Gradually add the dry ingredients to the butter mixture, alternating with the Greek yogurt. Begin and end with the dry ingredients, mixing until just combined. Do not overmix.

            Fold in Blueberries: Gently fold in the blueberries using a spatula, being careful not to crush them.

              Pour into Pan: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
