2 tablespoons cornstarch

1 teaspoon lemon zest

1 tablespoon lemon juice

3 large eggs

1 cup granulated sugar

¼ cup all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

½ cup freshly squeezed lemon juice

1 tablespoon lemon zest

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan, lining it with parchment paper for easy removal.

    Make the Crust: In a bowl, whisk together 1 ¾ cups flour, ½ cup powdered sugar, and ½ teaspoon salt. Using a pastry cutter or your fingers, work the chilled butter into the flour mixture until it resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking pan. Bake for 15 minutes or until lightly golden.

      Prepare the Blueberry Filling: In a medium bowl, mix 2 cups blueberries, ½ cup granulated sugar, 2 tablespoons cornstarch, 1 teaspoon lemon zest, and 1 tablespoon lemon juice. Toss gently to coat the blueberries evenly and set aside.

        Make the Lemon Custard: In a separate bowl, whisk together 3 large eggs and 1 cup granulated sugar until smooth. Mix in ¼ cup flour, ½ teaspoon baking powder, and ½ teaspoon salt until combined. Stir in ½ cup lemon juice and 1 tablespoon lemon zest until well blended.
