For the Blueberry Chia Jam:

2 cups fresh or frozen blueberries

2 tablespoons chia seeds

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lemon juice

Pinch of salt

For the Oat Crust:

1 ½ cups rolled oats

½ cup almond flour (or any nut flour)

¼ cup coconut oil (melted) or unsalted butter

¼ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon baking soda

Pinch of salt

For Topping:

¼ cup sliced almonds (or any nut of choice)

2 tablespoons coconut flakes (optional)

Instructions
 

Prepare the Blueberry Chia Jam:

    - In a medium saucepan over medium heat, combine the blueberries, honey (or maple syrup), lemon juice, and a pinch of salt.

      - Cook for about 5-7 minutes until the blueberries break down and release their juices, stirring occasionally.

        - Remove from heat and stir in the chia seeds. Allow the mixture to cool to thicken, about 10-15 minutes. It will continue to thicken as it cools.

          Prepare the Oat Crust:

            - Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

              - In a large bowl, mix the rolled oats, almond flour, baking soda, and salt together.

                - In a separate bowl, combine the melted coconut oil, honey (or maple syrup), and vanilla extract. Pour this mixture into the dry ingredients and stir until everything is well combined and crumbly.

                  Assemble the Bars:

                    - Press half of the oat mixture into the bottom of the prepared baking pan, creating an even layer.

                      - Spread the blueberry chia jam evenly over the oat base.

                        - Crumble the remaining oat mixture on top of the blueberry jam. Sprinkle sliced almonds and coconut flakes for added texture and flavor.

                          Bake the Bars:

                            - Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown.

                              - Remove from the oven and allow to cool in the pan for 10 minutes, then use the parchment overhang to lift the bars out and let cool completely on a wire rack.
