BLT Cauliflower Salad

Ingredients
  

1 medium head of cauliflower, chopped into bite-sized florets

4 slices of thick-cut bacon, diced

1 cup cherry tomatoes, halved

1/2 cup fresh parsley, chopped

1/4 cup green onions, sliced

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

Optional: 1/4 teaspoon smoked paprika for added flavor

Instructions
 

Prepare the Cauliflower: Preheat your oven to 425°F (220°C). Spread the cauliflower florets on a baking sheet lined with parchment paper. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.

    Roast the Cauliflower: Bake in the oven for about 25-30 minutes, turning once halfway through, until the cauliflower is golden brown and tender. Remove from oven and let it cool slightly.

      Cook the Bacon: In a skillet over medium heat, cook the diced bacon until crispy, about 8-10 minutes. Remove with a slotted spoon and let drain on paper towels. Reserve a tablespoon of bacon grease for added flavor if desired.

        Make the Dressing: In a medium bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, and some salt and pepper. For an extra smoky flavor, add smoked paprika if using.

          Combine the Salad: In a large mixing bowl, combine the roasted cauliflower, crispy bacon, cherry tomatoes, parsley, and green onions. Drizzle the dressing over the salad and toss gently until everything is well-coated.
