1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 cups fresh shiitake mushrooms, sliced (or any preferred mushrooms)

1 medium onion, sliced

3 cloves garlic, minced

2 tablespoons fresh ginger, minced

1-2 tablespoons black pepper (adjust to taste)

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1/4 cup chicken broth

2 tablespoons vegetable oil

1 tablespoon sesame oil

Salt to taste

Fresh cilantro or green onions for garnish

Marinate the Chicken: In a bowl, combine the chicken strips with soy sauce, oyster sauce, and cornstarch. Toss well to coat and let marinate for at least 20 minutes for optimal flavor.

    Prep Veggies: While the chicken marinates, slice the mushrooms and onion, and mince the garlic and ginger.

      Sear the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken in a single layer and sear it until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

        Cook the Aromatics: In the same skillet, add a splash of sesame oil. Add the sliced onions, minced garlic, and ginger; sauté for 2-3 minutes until fragrant and the onions are slightly translucent.

          Add Mushrooms: Toss in the sliced mushrooms and stir-fry until they are tender and browned, about 5-6 minutes.

            Combine Ingredients: Return the chicken to the skillet with the mushrooms and onions. Pour in the chicken broth and add the black pepper and salt. Stir well to combine all ingredients and let everything simmer for an additional 3-4 minutes, allowing the flavors to meld.
