Black Bean Filling:

1 can (15 oz) black beans, drained and rinsed

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Mango Salsa:

1 ripe mango, peeled, pitted, and diced

1 small red onion, finely chopped

1 jalapeño, deseeded and minced (adjust for spice level)

1 handful fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Avocado Cream:

1 ripe avocado

¼ cup Greek yogurt (or dairy-free alternative)

Juice of ½ lime

Salt and pepper to taste

Instructions

Prepare the Black Bean Filling:

    - In a medium skillet, heat the olive oil over medium heat. Add the drained and rinsed black beans, cumin, smoked paprika, garlic powder, and onion powder.

      - Cook for about 5-7 minutes, stirring occasionally, until heated through and slightly mashed. Season with salt and pepper to taste. Set aside.

        Make Mango Salsa:

          - In a bowl, combine diced mango, red onion, jalapeño, and cilantro.

            - Squeeze lime juice over the mixture and add salt to taste. Stir gently to combine and let it sit for about 10 minutes to allow flavors to meld.

              Prepare Avocado Cream:

                - In a small bowl, mash the avocado until smooth. Mix in Greek yogurt, lime juice, and season with salt and pepper. Adjust consistency with a little water if too thick.

                  Warm the Tortillas:

                    - Heat a skillet over medium heat. Warm the tortillas for about 30 seconds on each side until soft and pliable.

                      Assemble the Tacos:

                        - On each warm tortilla, spread a layer of black bean filling. Top with a generous spoonful of mango salsa and a drizzle of avocado cream.

                          Serve and Enjoy:

                            - Serve immediately, garnished with extra cilantro and lime wedges on the side for an added zing!
