Ingredients

For the Biscuit Crust:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk

For the Sausage Gravy:

1 pound breakfast sausage (bulk or casings removed)

1/4 cup all-purpose flour

2 cups whole milk

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

Salt to taste

For the Pizza Topping:

2 cups shredded mozzarella cheese

4 large eggs

Fresh parsley, chopped (for garnish)

Red pepper flakes (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Make the Biscuit Crust:

      - In a large mixing bowl, whisk together the flour, baking powder, and salt.

        - Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

          - Stir in the buttermilk until just combined. Do not overmix.

            - Turn the dough onto a floured surface and gently knead it a few times until it comes together. Pat it into a rectangle about ½ inch thick.

              Shape and Prepare the Crust:

                - Roll the dough out to fit a pizza stone or baking sheet (about 12 inches in diameter). Place the crust on the stone/sheet.

                  - Bake the biscuit crust in the preheated oven for about 10 minutes, until it’s lightly golden and just set.

                    Cook the Sausage Gravy:

                      - In a large skillet over medium heat, cook the breakfast sausage, breaking it apart with a spatula until browned and cooked through.

                        - Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to get rid of the raw flour taste.

                          - Slowly pour in the milk while stirring. Continue to cook, stirring often, until the gravy thickens (about 5-7 minutes). Season with black pepper, cayenne pepper (if using), and salt to taste.

                            Assemble the Pizza:

                              - Remove the biscuit crust from the oven and spread the sausage gravy evenly over the top.

                                - Sprinkle the shredded mozzarella cheese over the gravy. Make small wells in the cheese and crack an egg into each well (you may want to use a small dish to ensure the yolk stays intact).

                                  Bake the Pizza:

                                    - Return the pizza to the oven and bake for an additional 10-15 minutes, or until the egg whites are set and the yolks are slightly runny (or cooked to your liking) and the cheese is bubbly and golden.

                                      Garnish and Serve:

                                        - Remove the breakfast pizza from the oven and let it cool for a minute.

                                          - Garnish with chopped fresh parsley and a sprinkle of red pepper flakes if desired.

                                            - Slice and serve hot!
