Ingredients

1 cup unsalted butter (2 sticks), plus extra for greasing the pan

1 cup granulated sugar

1 cup brown sugar, packed

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup Biscoff cookie butter

1/2 cup chocolate chips (semi-sweet or dark)

1/2 cup crushed Biscoff cookies (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with unsalted butter or line it with parchment paper for easier removal.

Melt the Butter: In a medium saucepan, gently melt the 1 cup of unsalted butter over low heat. Be careful not to let it bubble or brown too much.

Mix the Sugars: Once melted, remove from heat and stir in the granulated sugar and brown sugar until combined.

Add Eggs and Vanilla: Allow the mixture to cool for a few minutes, then whisk in the eggs one at a time, followed by the vanilla extract.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.

Combine Wet and Dry: Gradually mix the dry ingredient mixture into the wet ingredients until just combined; do not overmix.

Add Biscoff Cookie Butter: Gently fold in the 1 cup of Biscoff cookie butter until evenly distributed throughout the batter.

Add Chocolate Chips: Fold in the chocolate chips, ensuring they are evenly dispersed throughout the brownie batter.

Transfer to Pan: Pour your brownie batter into the prepared baking pan, spreading it evenly.

Add Toppings: Sprinkle the crushed Biscoff cookies on top of the batter for an extra crunch and flavor.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Cool: Once done, remove brownies from the oven and let them cool in the pan on a wire rack for at least 20 minutes before cutting into squares.

Serve: Serve warm or at room temperature. Optional: drizzles of additional Biscoff cookie butter on top for decoration and extra flavor.
