Ingredients
  

1 lb boneless, skinless chicken thighs

1/4 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 cups cooked jasmine rice

1 cup steamed broccoli florets

1 carrot, julienned

1/4 cup edamame, shelled and cooked

2 tablespoons sesame seeds

2 green onions, chopped

4 small bento boxes or airtight containers

Instructions
 

Marinate the Chicken: In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Add chicken thighs, ensuring they are evenly coated. Let marinate in the refrigerator for at least 30 minutes (or overnight for best flavor).

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Baste frequently with the leftover marinade for added flavor.

      Prepare the Rice: While the chicken is cooking, prepare jasmine rice according to package instructions. Fluff with a fork once cooked and keep warm.

        Steam the Vegetables: Steam broccoli florets until bright green and tender (about 4-5 minutes). Don't forget to add the julienned carrots for the last 2 minutes of steaming.

          Assemble the Bento Box: Slice the grilled chicken into bite-sized pieces. In each bento box, layer a serving of jasmine rice, steamed broccoli, carrots, and edamame. Top with sliced chicken.

            Garnish: Sprinkle sesame seeds and chopped green onions over the chicken for added texture and flavor.

              Packaging Tips: Seal the bento boxes and store in the refrigerator. These can easily be reheated in the microwave or enjoyed cold!
