The term “teriyaki” originates from Japan, combining two words: "teri," meaning gloss or luster, and "yaki," meaning to grill or broil. Traditionally, teriyaki chicken is made by marinating the meat in a mixture of soy sauce, mirin (a sweet rice wine), sake, and sugar, before grilling or broiling it to achieve a beautifully glazed finish. This cooking method not only enhances the flavor but also adds an appealing texture to the chicken, making it a staple in Japanese cuisine.

Ingredients

1 lb boneless, skinless chicken thighs

½ cup soy sauce (low-sodium preferred)

¼ cup brown sugar

2 tablespoons honey

2 tablespoons rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon cornstarch (for coating)

Sesame seeds and sliced green onions, for garnish

Instructions

Marinate the Chicken: In a mixing bowl, combine soy sauce, brown sugar, honey, rice vinegar, minced garlic, ginger, and sesame oil. Whisk well to dissolve the sugar.

Prep Chicken: Cut the chicken thighs into bite-sized pieces. Add the chicken to the marinade, ensuring each piece is well-coated. Cover and marinate for at least 30 minutes in the refrigerator (up to 2 hours for more flavor).

Preheat Air Fryer: Preheat your air fryer to 375°F (190°C).

Coat Chicken: Remove the chicken from the marinade (reserve the marinade for later) and toss the chicken pieces in cornstarch until lightly coated. This will help give it a crispy texture.

Air Fry the Chicken: Place the coated chicken pieces into the air fryer basket in a single layer. Cook for 12-15 minutes, shaking the basket halfway through cooking, until the chicken is cooked through and slightly charred.

Prepare the Sauce: While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat and cook for about 3-5 minutes until slightly thickened.

Combine and Serve: Once the chicken is finished cooking, pour the thickened teriyaki sauce over the chicken and toss to coat evenly.

Garnish and Enjoy: Serve hot, garnished with sesame seeds and sliced green onions for that extra flair!
