Beijing Beef Stir Fry

Ingredients
  

1 lb (450g) beef sirloin, thinly sliced

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 bell pepper (red or green), sliced thin

1 cup broccoli florets

1 cup sugar snap peas, trimmed

3 cloves garlic, minced

1 tablespoon ginger, minced

1 teaspoon red pepper flakes (adjust to taste)

1/4 cup green onions, chopped

Cooked jasmine rice, for serving

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch. Mix well to coat the beef evenly. Let it marinate for at least 15 minutes to absorb the flavors.

    Prepare the Veggies: While the beef is marinating, wash and slice the bell pepper, and trim the broccoli and sugar snap peas. Set them aside.

      Heat the Wok: In a large wok or non-stick skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Ensure the oil is hot but not smoking.

        Cook the Beef: Add the marinated beef to the hot oil in a single layer. Stir-fry for about 2-3 minutes until it’s browned and cooked through. Remove the beef from the wok and set aside.

          Stir-Fry the Vegetables: In the same wok, add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Then, add the bell pepper, broccoli, and sugar snap peas. Cook for about 3-4 minutes until the vegetables are tender yet still crisp.

            Combine and Season: Return the cooked beef to the wok. Sprinkle red pepper flakes over the mixture for a spicy kick. Stir everything together and cook for another minute to combine the flavors.

              Garnish and Serve: Once everything is heated through, remove from heat. Garnish with chopped green onions. Serve hot over cooked jasmine rice.
