1 lb ground beef (preferably lean)

2 cloves garlic, minced

1 small onion, finely chopped

1 tbsp soy sauce

1 tbsp oyster sauce

1 tsp sesame oil

1 tsp fresh ginger, grated

1/2 tsp black pepper

1/2 cup bell pepper, finely chopped (red or yellow for color)

1/4 cup green onions, chopped (plus extra for garnish)

For the Blueberry Glaze:

1 cup fresh blueberries (or frozen, thawed)

1/4 cup water

2 tbsp honey or maple syrup

1 tbsp apple cider vinegar

1 tsp cornstarch mixed with 1 tbsp water (for thickening)

Pinch of salt

For Serving:

1 head of butter lettuce or romaine leaves

Sliced cucumbers

Chopped cilantro (optional)

Crushed peanuts (optional)

Instructions
 

Prepare the Blueberry Glaze:

    - In a small saucepan, combine the blueberries, water, honey (or maple syrup), apple cider vinegar, and a pinch of salt.

      - Bring to a simmer over medium heat, and let it cook for about 5-7 minutes, stirring occasionally until the blueberries start to break down.

        - Stir in the cornstarch mixture and cook for another 1-2 minutes until the glaze thickens. Remove from heat and set aside.

          Cook the Beef Filling:

            - In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion turns translucent.

              - Add the ground beef, breaking it apart with a spatula. Cook until it's browned and fully cooked (about 5-7 minutes).

                - Stir in the grated ginger, soy sauce, oyster sauce, black pepper, and chopped bell pepper. Cook for another 2-3 minutes until the bell pepper softens.

                  - Lastly, fold in the chopped green onions and remove the skillet from heat.

                    Assemble the Wraps:

                      - Carefully wash and separate the leaves of the butter lettuce or romaine. Pat them dry.

                        - Lay out the lettuce leaves on a serving platter. Spoon a generous amount of the beef filling into the center of each leaf.

                          - Drizzle the blueberry glaze over the beef filling.

                            Garnish and Serve:

                              - Top the wraps with sliced cucumbers, additional green onions, chopped cilantro, and crushed peanuts if using.

                                - Roll the wraps up or fold them, and enjoy immediately!
