BBQ Pulled Chicken Sliders

2 lbs boneless, skinless chicken thighs

1 cup BBQ sauce (your favorite brand or homemade)

1 cup chicken broth

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon brown sugar

½ teaspoon salt

½ teaspoon black pepper

12 slider buns

1 cup coleslaw (store-bought or homemade)

Pickles, for garnish (optional)

Instructions
 

Prepare the Chicken: Rinse the chicken thighs under cold water and pat dry. Trim any excess fat.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Add the minced garlic and cook for another minute until fragrant.

      Season the Chicken: In a large mixing bowl, combine the smoked paprika, cumin, brown sugar, salt, and black pepper. Add the chicken thighs to the bowl and rub the spice mixture thoroughly over the chicken.

        Cook the Chicken: Place the seasoned chicken thighs in a slow cooker. Pour in the chicken broth and half of the BBQ sauce. Add the sautéed onion and garlic mixture. Cover and cook on low for 5-6 hours or high for 3-4 hours until the chicken is tender and easily shreds with a fork.

          Shred the Chicken: Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the remaining BBQ sauce. Let it cook on low for another 30 minutes to absorb the flavors.

            Assemble the Sliders: Slice the slider buns in half. On the bottom half of each bun, place a generous scoop of the BBQ pulled chicken. Top with coleslaw and add pickles if desired. Finally, place the top half of the bun over the filling.

              Serve: Arrange the sliders on a platter and serve immediately, or cover them with a damp cloth to keep warm until serving.
