Ingredients

2 cups cooked chicken, shredded (use rotisserie chicken for convenience)

1/2 cup BBQ sauce (choose your favorite brand or homemade)

4 flatbreads or naan

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup fresh cilantro, chopped

1/2 cup corn (canned or frozen)

1 avocado, sliced

Olive oil for brushing

Salt and pepper to taste

Optional: red pepper flakes for a kick

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Chicken Mixture: In a medium bowl, combine the shredded chicken and BBQ sauce. Mix until the chicken is well-coated with the sauce. Season with salt and pepper to taste.

Prepare the Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Brush each flatbread lightly with olive oil to give a nice golden crisp.

        Assemble the Flatbreads:

          - Evenly spread the BBQ chicken mixture over each flatbread, leaving a small border around the edges.

            - Sprinkle the shredded mozzarella cheese over the chicken.

              - Distribute the sliced red onions and corn evenly atop the cheese.

Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once baked, remove the flatbreads from the oven. Top each one with fresh cilantro and avocado slices. If desired, sprinkle some red pepper flakes for an added kick.

Slice and Enjoy: Cut the flatbreads into slices and serve warm. Perfect for a party platter or a casual weeknight dinner!
