BBQ Brisket Melts

2 pounds of smoked brisket, sliced thin

1 cup of BBQ sauce (your favorite brand or homemade)

8 slices of sourdough bread

4 cups of shredded sharp cheddar cheese

1 cup of caramelized onions (2 large onions, sliced and cooked slowly in olive oil until golden)

4 tablespoons of unsalted butter, softened

1 teaspoon of garlic powder

1 teaspoon of onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Prepare the Brisket: In a medium saucepan over low heat, combine the sliced smoked brisket with the BBQ sauce. Stir well and heat gently for about 10 minutes, or until heated through. Remove from heat and set aside.

    Make the Caramelized Onions: If not using pre-made, heat a tablespoon of olive oil in a skillet over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, for about 30 minutes or until they are golden brown and sweet. Season with salt and pepper to taste.

      Prepare the Bread: Mix the softened butter with garlic powder, onion powder, salt, and pepper in a small bowl. Spread this butter mixture generously on one side of each slice of sourdough bread.

        Assemble the Melts: Heat a non-stick skillet or griddle over medium heat. Place half of the slices of bread, buttered side down, on the skillet. Layer each slice with a generous portion of the heated brisket, followed by some caramelized onions, and then top with shredded cheddar cheese. Cover with the remaining bread slices, buttered side up.

          Grill the Melts: Cook until the bottom is golden brown and crispy (about 4-5 minutes). Carefully flip the sandwich over, pressing it down with a spatula to help it stick together. Cook for another 4-5 minutes on the other side until it's golden brown and the cheese has melted.

            Serve: Remove the sandwiches from the skillet, and allow them to cool for a minute before slicing in half. Serve hot, garnished with chopped fresh parsley if desired.
