2 boneless, skinless chicken breasts

1 ripe peach, diced

1 cup fresh basil leaves, chopped

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon balsamic vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

4 whole wheat pita pockets

1 cup mixed greens (arugula, spinach, or your choice)

½ cup crumbled feta cheese (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine olive oil, honey, balsamic vinegar, garlic powder, salt, and pepper. Add the chicken breasts, making sure they are well coated. Cover and marinate for at least 30 minutes or up to 2 hours in the refrigerator.

    Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for 5 minutes before slicing into strips.

      Prepare the Peach and Basil Mix: In a separate bowl, mix the diced peaches with the chopped basil. Season lightly with salt and pepper.
