Ingredients

2 ripe bananas, mashed

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup whole wheat flour (or gluten-free flour)

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup fresh blueberries (or frozen, thawed and drained)

1/4 cup chopped nuts (like walnuts or pecans, optional)

1/4 cup mini chocolate chips (optional)

Instructions

Preheat Your Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, applesauce, honey (or maple syrup), and vanilla extract. Stir until well mixed and smooth.

Combine Dry Ingredients: In another bowl, whisk together the rolled oats, whole wheat flour, baking soda, cinnamon, and salt until evenly combined.

Combine Both Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix!

Fold in the Goodies: Gently fold in the fresh blueberries, nuts (if using), and mini chocolate chips (if using) until evenly distributed throughout the dough.

Scoop the Cookies: Use a tablespoon or cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the edges are lightly golden and the centers are set.

Cool: Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Enjoy: Serve warm for a gooey treat or store in an airtight container for later snacking. These cookies can be enjoyed fresh or stored for up to one week!
