Ingredients

1 cup rolled oats

1 cup mashed ripe bananas (about 2-3 medium bananas)

1/3 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/4 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease them with cooking spray.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), applesauce, milk, and vanilla extract. Stir well until all ingredients are fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt. If you're adding nuts or chocolate chips, reserve a few for topping.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; it's okay if the batter is a little lumpy.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. If desired, sprinkle the reserved nuts or chocolate chips on top of each muffin.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. The edges should be lightly golden.

Cool: Once baked, remove from the oven and allow the muffins to cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.

Serve: Enjoy your delicious Banana Bliss Oatmeal Muffins warm or at room temperature. They make for a perfect breakfast, snack, or even dessert!
