Balsamic–Glazed Pork Tenderloin

1.5 lbs pork tenderloin

1 cup balsamic vinegar

1/3 cup honey

2 tablespoons Dijon mustard

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

Salt and pepper, to taste

Fresh rosemary sprigs, for garnish (optional)

Instructions
 

Marinate the Pork: In a medium bowl, whisk together the balsamic vinegar, honey, Dijon mustard, olive oil, minced garlic, chopped rosemary, and thyme. Season with salt and pepper. Reserve about 1/4 cup of the marinade for later.

    Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the remaining marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

      Preheat Oven: Preheat your oven to 400°F (200°C).

        Sear the Pork: Remove the pork from the marinade and let excess marinade drip off. In a large ovenproof skillet, heat a bit of olive oil over medium-high heat. Once hot, add the pork tenderloin and sear for about 3-4 minutes on each side until golden brown.

          Glaze and Roast: Brush the reserved marinade over the seared pork. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

            Rest and Slice: Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This helps retain the juices.

              Serving: Slice the pork tenderloin and drizzle with any remaining glaze from the pan. Garnish with fresh rosemary sprigs if desired. Serve with your choice of sides, such as roasted vegetables or mashed potatoes.
