1 cup broccoli florets, steamed and chopped

1 cup carrots, grated

1 cup sweet potatoes, peeled and cubed

1/2 cup cooked quinoa

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup grated Parmesan cheese or nutritional yeast (for a vegan option)

2 eggs (or flax eggs for a vegan option: 2 tbsp ground flaxseed mixed with 6 tbsp water)

2 garlic cloves, minced

1 tsp onion powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Olive oil spray (for greasing)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Sweet Potatoes: Boil or steam the sweet potatoes until tender, about 10-15 minutes. Drain and let cool.
