Baked Teriyaki Salmon with Steamed Broccoli

4 salmon fillets (about 6 oz each)

1/4 cup soy sauce (low sodium preferred)

1/4 cup honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for sauce thickening)

2 cups fresh broccoli florets

1 tablespoon olive oil

Salt and pepper to taste

Sesame seeds and green onions for garnish (optional)

Instructions
 

Preheat the oven: Begin by preheating your oven to 400°F (200°C).

    Make the teriyaki sauce: In a medium saucepan over medium heat, combine the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger. Stir to combine and bring to a gentle simmer.

      Thicken the sauce: Add the cornstarch-water mixture to the saucepan and continue to simmer for an additional 1-2 minutes, stirring constantly until the sauce thickens. Remove from heat and set aside.

        Prepare the salmon: Line a baking sheet with parchment paper for easy cleanup. Place the salmon fillets on the baking sheet, skin side down. Lightly season with salt and pepper.

          Glaze the salmon: Brush the teriyaki sauce generously over each salmon fillet, reserving some sauce for later.

            Bake the salmon: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Steam the broccoli: While the salmon is baking, bring a pot of water to a boil and place a steamer basket over it. Add the broccoli florets to the basket, cover, and steam for about 5-7 minutes, or until the broccoli is tender yet still bright green. Drizzle with olive oil and season with salt and pepper.

                Serve: Once the salmon is done, remove it from the oven. Drizzle the reserved teriyaki sauce over the salmon. Serve immediately with the steamed broccoli on the side. Garnish with sesame seeds and chopped green onions if desired.
