Baked Sausage and Pepper Penne

12 ounces penne pasta

1 pound Italian sausage (mild or spicy, based on preference)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, sliced

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 can (14.5 ounces) diced tomatoes, with juices

½ cup chicken broth (or vegetable broth)

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat & Cook Pasta: Preheat your oven to 375°F (190°C). In a large pot, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Sausage: In a large, oven-safe skillet or a Dutch oven, heat the olive oil over medium heat. Remove the sausage from its casings and crumble into the skillet. Cook, stirring frequently, until the sausage is browned and cooked through, about 5-7 minutes. Remove the cooked sausage from the skillet and set aside.

      Cook Vegetables: In the same skillet, add the sliced bell peppers and onion. Sauté for about 5-6 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

        Combine Ingredients: Return the cooked sausage to the skillet with the vegetables. Stir in the diced tomatoes (with juices), chicken broth, dried oregano, dried basil, and season with salt and pepper to taste. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.

          Mix with Pasta: Add the cooked penne pasta to the skillet, mixing well to combine all the ingredients evenly. Remove from heat.

            Add Cheese: Sprinkle the mozzarella cheese and Parmesan cheese over the top of the pasta mixture, spreading it out evenly.

              Bake: Transfer the skillet (make sure it's oven-safe) to the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

                Garnish & Serve: Remove from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves if desired. Serve hot and enjoy your deliciously cheesy and hearty Baked Sausage and Pepper Penne!
