Baked Pesto Mozzarella Chicken

4 boneless, skinless chicken breasts

½ cup fresh basil pesto (store-bought or homemade)

1 cup fresh mozzarella cheese, shredded (or sliced)

¼ cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 tablespoons olive oil

3 cloves garlic, minced

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prep the Chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.

      Sauté the Garlic: In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it. Remove from heat.

        Combine Ingredients: In a mixing bowl, combine the sautéed garlic with the pesto and deep-fry until well mixed.

          Assemble the Dish: In a 9x13 inch baking dish, lay the seasoned chicken breasts. Spread an even layer of the pesto mixture over the top of each chicken breast.

            Add Cheese and Tomatoes: Sprinkle the shredded mozzarella and grated Parmesan over the pesto-covered chicken. Arrange the halved cherry tomatoes around the chicken, drizzle with a bit more olive oil, and add a pinch of salt and pepper.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the cheese is bubbly and golden.
