Baked Oatmeal Cups

2 cups rolled oats

1 teaspoon baking powder

½ teaspoon cinnamon

¼ teaspoon salt

2 cups milk (dairy or plant-based)

2 large eggs

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 cup mixed berries (blueberries, raspberries, strawberries, or blackberries)

¼ cup chopped nuts (walnuts or almonds, optional)

¼ cup coconut flakes (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir well to ensure everything is evenly distributed.

      Mix Wet Ingredients: In another bowl, whisk together the milk, eggs, honey (or maple syrup), and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture into the bowl with dry ingredients. Stir until just combined. Gently fold in the mixed berries, nuts, and coconut flakes if using.

          Fill Muffin Tin: Divide the oatmeal mixture evenly between the muffin cups, filling each about ¾ full.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.

              Cool & Serve: Allow the oatmeal cups to cool in the muffin tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature. They can be stored in an airtight container in the fridge for up to a week.
