1 can (15 oz) chickpeas, rinsed and drained

1 medium zucchini, grated (about 1 cup)

1/2 cup fresh parsley, chopped

3 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp paprika

1/4 tsp cayenne pepper (optional)

1/4 cup breadcrumbs (gluten-free if desired)

1 tbsp tahini

1 tbsp olive oil

Salt and pepper to taste

Mini slider buns or lettuce leaves for serving

Tzatziki sauce or hummus for topping

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare Zucchini: Grate the zucchini using a box grater or food processor. Sprinkle with a pinch of salt and let sit in a colander for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini with your hands or a clean kitchen towel to remove as much moisture as possible.

      Blend Ingredients: In a food processor, combine the chickpeas, grated zucchini, parsley, garlic, cumin, coriander, paprika, cayenne (if using), breadcrumbs, tahini, olive oil, salt, and pepper. Pulse until the mixture is combined but still slightly chunky. Be careful not to over-blend.

        Form Patties: Using your hands, form the mixture into small slider-sized patties (about 2 inches wide). Place the patties on the prepared baking sheet, spaced apart.

          Bake the Sliders: Brush or spray the tops of the patties lightly with olive oil, then bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy on the edges.
