Baked Cinnamon French Toast Muffins

6 slices of stale bread (Challah, Brioche, or White Bread, cubed)

2 large eggs

1 cup milk (whole or almond milk)

1/4 cup sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/4 teaspoon salt

2 tablespoons melted butter (plus extra for greasing)

1/2 cup maple syrup (for drizzling)

Optional toppings: powdered sugar, chopped nuts, or fresh berries

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with butter or non-stick spray.

    Prepare the Bread: In a large bowl, add the cubed bread and set aside.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg (if using), and salt until well combined.

        Combine Ingredients: Pour the egg mixture over the cubed bread. Gently stir to ensure all the bread is coated. Allow it to sit for about 10 minutes so the bread can absorb the mixture.

          Scoop into Muffin Tin: Using a spoon or an ice cream scoop, fill each muffin cup about 3/4 full with the bread mixture. Drizzle the melted butter evenly over the tops of the muffins.

            Bake: Place the muffin tin in the oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

              Cool and Serve: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring to a wire rack. Drizzle with maple syrup and add any optional toppings like powdered sugar or berries before serving.
