Baked Cabbage Nest Burgers

1 large head of green cabbage

1 lb ground turkey (or your choice of ground meat)

1/2 cup breadcrumbs (or almond flour for a gluten-free option)

1/4 cup grated Parmesan cheese

1/4 cup diced onion

2 cloves garlic, minced

1 large egg

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

Olive oil spray

Optional toppings: sliced avocado, tomato, and your favorite sauce (like sriracha mayo or ketchup)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Cabbage Leaves: Carefully remove the outer leaves from the cabbage head, aiming for the largest ones. You will need about 8-10 leaves for the burgers. Blanch them in boiling water for 2-3 minutes until they become tender, then immediately transfer them to an ice bath to stop the cooking. Pat dry with paper towels.

      Make the Burger Mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, diced onion, minced garlic, egg, oregano, paprika, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

        Form the Patties: Divide the meat mixture into 4 equal portions and shape them into burger patties.

          Assemble the Baked Cabbage Nests: Spray the baking sheet lightly with olive oil. Place 1 cabbage leaf on the baking sheet, then add a meat patty on top. Wrap the edges of the cabbage leaf over the patty to create a nest. Repeat with remaining cabbage leaves and patties.

            Bake the Nests: Once all nests are assembled, spray the tops lightly with olive oil. Bake in the preheated oven for about 25-30 minutes, or until the meat is cooked through (internal temperature should reach 165°F or 74°C).

              Serve: Carefully remove the nests from the oven. Allow them to cool slightly before serving. Top with your choice of avocado slices, tomato, and sauce for a delicious burst of flavor.
