Baked Brie and Cranberry Bites

1 sheet of puff pastry (thawed)

1 wheel of Brie cheese (approximately 8 oz)

1/2 cup cranberry sauce (store-bought or homemade)

1 tablespoon honey

1/4 cup chopped pecans or walnuts (optional)

1 egg (beaten for egg wash)

Fresh rosemary or thyme sprigs (for garnish)

Sea salt (for sprinkling)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth it out and make it slightly thinner. Cut the pastry into squares, approximately 4x4.

      Assemble the Bites: Place a square of puff pastry on a parchment-lined baking sheet. Cut a slice of Brie cheese and place it in the center of the pastry. Top the Brie with about a tablespoon of cranberry sauce, a drizzle of honey, and a sprinkle of chopped nuts (if using).

        Wrap the Brie: Fold the corners of the pastry over the Brie and cranberry filling, pinching them together to secure the package. Make sure the cheese is fully enclosed.

          Brush with Egg Wash: Using a pastry brush, gently brush the top of each wrapped Brie with the beaten egg for a beautiful golden finish.

            Bake: Sprinkle a light pinch of sea salt on top of each bite, then place the baking sheet in the preheated oven. Bake for 15-18 minutes, or until the pastry is puffed and golden brown.

              Cool and Serve: Remove from the oven and let the bites cool for a few minutes. Garnish with fresh rosemary or thyme sprigs before serving. Enjoy warm!
