6 slices of crispy bacon, chopped

2 cups fresh corn kernels (or 1 can of corn, drained)

2 ripe avocados, diced

1 cup cherry tomatoes, halved

½ red onion, finely diced

1 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon honey

Salt and pepper, to taste

Optional: Crumbled feta cheese, for garnish

Cook the Bacon: In a large skillet over medium heat, cook the bacon until crispy. Once cooked, transfer it to a plate lined with paper towels to drain excess grease. Allow it to cool, then chop into bite-sized pieces.

    Prepare the Corn: If you're using fresh corn, bring a saucepan of water to a boil. Add the corn and cook for about 3-5 minutes until tender. Drain, then rinse with cold water to stop the cooking process. If you’re using canned corn, simply drain it well.

      Mix the Salad: In a large mixing bowl, combine the cooked corn, diced avocados, halved cherry tomatoes, diced red onion, and chopped cilantro. Gently toss to combine the ingredients.

        Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well blended. Taste and adjust seasoning if necessary.

          Combine and Serve: Pour the dressing over the salad and toss gently to coat all ingredients evenly. Add the crispy bacon and toss again lightly. If desired, sprinkle crumbled feta cheese on top for an extra burst of flavor.
