Ingredients

4 large whole wheat tortillas

8 ounces sliced turkey breast

8 ounces cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup baby spinach leaves

1/2 cup sliced bell peppers (any color)

1/4 cup sliced black olives (optional)

1 tablespoon Dijon mustard (optional)

Salt and pepper to taste

Fresh herbs (like dill or parsley) for garnish (optional)

Instructions

Prepare the Spread: In a mixing bowl, combine the softened cream cheese and Dijon mustard. Mix well until smooth. Add salt and pepper to taste.

Assemble the Tortillas: Lay a tortilla flat on a cutting board. Evenly spread a generous layer of the cream cheese mixture across the tortilla, leaving 1 inch around the edges.

Layer the Ingredients: On top of the cream cheese, layer with slices of turkey, shredded cheddar cheese, baby spinach, bell pepper slices, and black olives if using. Ensure the layers are evenly distributed.

Rolling Up: Starting from one edge, carefully roll the tortilla tightly into a log shape. Make sure you keep the filling tightly packed while rolling. Repeat with the remaining tortillas.

Chill and Slice: Once all tortillas are rolled, wrap them in plastic wrap or foil and chill in the refrigerator for about 30 minutes. This helps the pinwheels hold their shape.

Cut into Pinwheels: Remove from the fridge and carefully unwrap. Using a sharp knife, cut each roll into 1-inch thick slices to create pinwheels.

Serve: Arrange the pinwheels on a serving platter and garnish with fresh herbs, if desired. Enjoy with a side of fruit or veggie sticks for a complete lunch!
