1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup shredded cheddar cheese

8 small flour or corn tortillas

1 cup sour cream

1 avocado, sliced

Fresh cilantro, for garnish

1 small onion, chopped

2 cloves garlic, minced

Olive oil, for cooking

Salt and pepper, to taste

Instructions
 

Cook the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent (about 3-4 minutes).

    Brown the Meat: Add the ground beef or turkey to the skillet. Season with salt and pepper, and cook until browned and cooked through, breaking it up with a spatula (approximately 5-7 minutes).

      Add Beans and Tomatoes: Stir in the kidney beans, black beans, diced tomatoes (with juices), and taco seasoning. Mix well and let it simmer for about 10 minutes on low heat, stirring occasionally, to allow the flavors to meld. If the mixture is too thick, you can add a splash of water.

        Prepare the Tortillas: While the chili is simmering, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in foil and warm them in a 350°F (175°C) oven for about 10 minutes.

          Assemble the Tacos: On each tortilla, spoon a generous amount of the chili mixture. Top each taco with shredded cheddar cheese, a dollop of sour cream, and sliced avocado.
