2 large whole wheat tortillas

1 cup cooked chicken breast, shredded or diced

1 ripe avocado

1 cup fresh basil leaves

1/4 cup grated Parmesan cheese

1/4 cup pine nuts (or walnuts)

2 cloves garlic

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

1 cup mixed greens (for extra crunch)

Optional: cherry tomatoes, halved

Instructions
 

Make the Avocado Pesto: In a food processor, combine the ripe avocado, basil leaves, Parmesan cheese, pine nuts, garlic, olive oil, lemon juice, salt, and pepper. Blend until you achieve a smooth and creamy consistency. Taste and adjust seasoning if necessary.

    Prepare the Chicken: In a mixing bowl, add the cooked chicken and a few tablespoons of the avocado pesto. Mix well to coat the chicken evenly.

      Assemble the Wraps: Lay the whole wheat tortillas flat on a clean surface. Spread a generous layer of the remaining avocado pesto on each tortilla.

        Add the Filling: Place the pesto-coated chicken on the bottom half of each tortilla. Top with a handful of mixed greens and optionally add halved cherry tomatoes.

          Wrap It Up: Fold in the sides of the tortilla, then roll it tightly from the bottom up to enclose the filling securely.

            Optional Grilling: For a warm wrap, heat a non-stick skillet over medium heat. Place the wraps seam-side down and grill for about 2-3 minutes on each side until golden brown and heated through.
