2 ripe avocados

4 slices of artisan whole-grain bread

4 large eggs

1 tablespoon olive oil

1/4 cup feta cheese, crumbled (optional)

Fresh herbs (like cilantro or chives), for garnish

Instructions
 

Prepare the Avocado Spread:

    - Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

      - Add a splash of fresh lemon juice, salt, and black pepper. Mash the mixture with a fork until it reaches your desired level of creaminess (smooth or chunky).

        Toast the Bread:

          - Preheat your oven to 400°F (200°C) or set your toaster to medium-high.
