1 ripe avocado, cubed

1 cup shelled edamame (fresh or frozen)

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon honey or agave syrup

Salt and freshly ground black pepper, to taste

Optional: 1/4 cup feta cheese, crumbled

Prep the Edamame: If using frozen edamame, boil a small pot of water and add the edamame. Cook according to package instructions, usually about 3-5 minutes. Drain and rinse under cold water to cool.

    Chop the Vegetables: While the edamame is cooking, prepare your vegetables. Cube the avocado, dice the cucumber, slice the cherry tomatoes in half, and finely chop the red onion and cilantro.

      Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey (or agave), salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, gently fold in the cubed avocado, boiled edamame, diced cucumber, halved cherry tomatoes, red onion, and cilantro.
