Avocado Chicken Quesadillas

2 large tortillas (flour or corn based on preference)

1 cup cooked chicken, shredded (grilled or rotisserie)

1 ripe avocado, mashed

1 cup shredded cheese (Mexican blend or cheddar)

1 small onion, finely chopped

1 small bell pepper, chopped (red or green)

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Prepare the Veggies: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until soft and translucent, about 5 minutes. Season with salt and pepper. Remove from heat and set aside.

    Mix the Filling: In a mixing bowl, combine the shredded chicken, mashed avocado, sautéed onions and peppers, garlic powder, cumin, and additional salt and pepper if necessary. Mix well to ensure all ingredients are nicely combined.

      Assemble Quesadillas: On one tortilla, spread half of the chicken and avocado mixture evenly. Sprinkle half of the shredded cheese on top. Place the second tortilla over the filling and gently press down.

        Cook the Quesadillas: In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Carefully place the assembled quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy, then carefully flip and cook the other side for another 3-4 minutes, adding more oil if necessary.

          Slice and Serve: Once both sides are beautifully golden and the cheese has melted, remove the quesadilla from the skillet. Let it cool for a minute, then slice it into wedges. Garnish with fresh cilantro and serve with sour cream and salsa on the side.
