Asparagus Pasta

8 ounces of your favorite pasta (spaghetti or fettuccine works great)

1 pound of fresh asparagus, trimmed and cut into 2-inch pieces

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Zest of 1 lemon

Juice of 1 lemon

1/4 cup grated Parmesan cheese (plus more for serving)

1/4 cup fresh basil, chopped (optional)

Freshly cracked black pepper, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Blanche the Asparagus: In the same pot (or a separate pot if desired), add the asparagus pieces and blanch for about 2-3 minutes until bright green and tender but still crisp. Drain the asparagus and immediately transfer to a bowl of ice water to halt the cooking process. Drain again and set aside.

      Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute). Be careful not to burn the garlic.

        Combine Ingredients: Add the blanched asparagus to the skillet and toss well to combine. Stir in the cooked pasta, lemon zest, and lemon juice. If the mixture seems dry, gradually add some of the reserved pasta water until you reach your desired consistency.

          Season: Add salt and pepper to taste, and toss in the grated Parmesan cheese while stirring until melted and creamy.

            Finish & Serve: Remove from heat and add the fresh basil if using. Serve hot with additional Parmesan cheese and freshly cracked black pepper on top.
