2 cups rolled oats

1 cup unsweetened applesauce

1 cup finely chopped apples (about 2 medium apples)

1 cup chopped walnuts

1/2 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/2 cup raisins or dried cranberries (optional)

1/2 cup flaxseeds or chia seeds (optional, for added nutrition)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving a slight overhang on the sides for easy removal.

    Combine Wet Ingredients: In a large mixing bowl, combine the applesauce, honey (or maple syrup), almond butter, and vanilla extract. Stir well until all wet ingredients are thoroughly mixed.

      Mix Dry Ingredients: In another bowl, combine the rolled oats, chopped apples, walnuts, cinnamon, nutmeg (if using), salt, and any optional ingredients like raisins and flaxseeds. Mix well to ensure even distribution.

        Combine Mixtures: Pour the dry ingredients into the bowl with the wet ingredients. Stir until everything is evenly combined. The mixture should be thick and sticky.

          Transfer to Baking Dish: Spread the mixture evenly into the prepared baking dish, pressing down firmly to pack it tightly. This helps the bars hold their shape after baking.

            Bake: Place in the preheated oven and bake for 25-30 minutes or until the edges turn golden brown. Keep an eye on them to ensure they don’t overcook.

              Cool: Once baked, remove from the oven and let them cool in the pan for about 10 minutes. Using the overhanging parchment paper, lift the bars out of the pan and place them on a wire rack to cool completely.
