Ingredients

8 slices of white or whole wheat bread

2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and finely chopped

1 tablespoon lemon juice

1 teaspoon cinnamon

2 tablespoons brown sugar

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

4 tablespoons butter, for cooking

1/4 cup granulated sugar (for coating)

Additional cinnamon (optional, for coating)

Maple syrup (for serving)

Instructions

Prepare the Filling:

    - In a mixing bowl, combine the chopped apples, lemon juice, cinnamon, and brown sugar. Mix well to coat the apples evenly and set aside.

      Flatten the Bread:

        - Using a rolling pin, flatten each slice of bread until about 1/4 inch thick. This will make it easier to roll.

          Construct the Roll-Ups:

            - Take a tablespoon of the apple filling and place it near one edge of the flattened bread. Roll the bread tightly around the filling and pinch the edges to seal. Repeat for all slices.

              Prepare the Egg Mixture:

                - In a bowl, whisk together the eggs, milk, and vanilla extract until well combined.

                  Heat the Skillet:

                    - In a large skillet or griddle, melt 2 tablespoons of butter over medium heat.

                      Dip and Cook:

                        - Dip each roll-up in the egg mixture, ensuring they are fully coated. Place them seam side down in the skillet. Cook for 2-3 minutes on each side, or until golden brown and crispy. Cook in batches if necessary, adding more butter as needed.

                          Coat the Roll-Ups:

                            - In a shallow dish, combine the granulated sugar and additional cinnamon. Once cooked, roll the warm French toast roll-ups in the cinnamon-sugar mixture until fully coated.

                              Serve:

                                - Serve the roll-ups warm, drizzled with maple syrup for that extra touch of sweetness!
