1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ cup brown sugar

1 tablespoon lemon juice

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

½ cup old-fashioned oats

½ cup all-purpose flour

½ cup brown sugar

½ teaspoon ground cinnamon

½ cup unsalted butter, melted

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes, then remove and let cool.

      Prepare the Apple Filling: In a large bowl, toss the diced apples with cinnamon, nutmeg, brown sugar, and lemon juice. Set aside to allow the flavors to meld.

        Prepare the Cheesecake Filling: In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla extract with an electric mixer until smooth. Add eggs one at a time, mixing well after each addition. Finally, blend in the sour cream until the mixture is creamy and well incorporated.
