For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

For the Cheesecake Filling:

2 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 teaspoon cinnamon

For the Apple Filling:

3 large Granny Smith apples, peeled, cored, and diced

½ cup brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

For the Crisp Topping:

¾ cup old-fashioned oats

½ cup all-purpose flour

½ cup brown sugar

½ teaspoon cinnamon

½ cup unsalted butter, melted

Instructions
 

Preheat the oven to 325°F (163°C).

    Make the crust:

      - In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

          Prepare the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese and granulated sugar with a mixer on medium speed until smooth and creamy, about 3 minutes.

              - Add the vanilla extract and mix well.

                - Incorporate the eggs one at a time, mixing just until combined after each addition.

                  - Finally, mix in the sour cream and cinnamon until the mixture is smooth.

                    Prepare the apple filling:

                      - In a separate bowl, toss the diced apples with brown sugar, cinnamon, lemon juice, and cornstarch until well coated. Set aside.

                        Assemble the cheesecake:

                          - Pour half of the cheesecake filling into the baked crust, then layer half of the apple mixture over it. Repeat with the remaining cheesecake filling and apple filling.

                            Make the crisp topping:

                              - In a medium bowl, combine the oats, flour, brown sugar, and cinnamon. Pour in the melted butter and stir until crumbly.

                                  Bake the cheesecake:
