Ingredients

For the Waffles:

1 ½ cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

1 ½ cups milk

1 large egg

½ cup unsalted butter, melted

1 teaspoon vanilla extract

For the Apple Filling:

2 medium apples, peeled, cored, and diced (such as Granny Smith or Honeycrisp)

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon unsalted butter

For Assembly:

Maple syrup (for drizzling)

Whipped cream (optional)

Powdered sugar (for dusting, optional)

Instructions

Make the Wafer Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon. In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix; the batter can be a bit lumpy.

Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions.

Cook the Waffles: Lightly grease the waffle iron with cooking spray or a small amount of melted butter. Pour the recommended amount of batter into the center of the preheated waffle iron, close the lid, and cook according to the manufacturer's instructions or until golden brown. Repeat until all the batter is used.

Make the Apple Filling: In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the diced apples, brown sugar, cinnamon, and lemon juice. Sauté for about 5-7 minutes, or until the apples are tender and coated with the syrupy mixture. Remove from heat and set aside.

Assemble the Sandwiches: Place one waffle on a plate and spoon a generous portion of the apple filling onto the center. Top with another waffle to create a sandwich. Repeat this process with the remaining waffles and filling.

Serve: Drizzle with maple syrup, add a dollop of whipped cream if desired, and dust with powdered sugar for an extra touch. Serve warm and enjoy your delicious apple cinnamon waffle sandwiches!
