1 cup all-purpose flour

2 large eggs

2 cups milk

2 tablespoons melted butter

1 tablespoon sugar

1 teaspoon vanilla extract

3 medium-sized apples, peeled, cored, and thinly sliced (Granny Smith or Honeycrisp work well)

2 tablespoons butter

1 teaspoon cinnamon

1 tablespoon brown sugar

1 tablespoon lemon juice

For the Cream Filling:

2 cups heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon cinnamon

For Garnish:

Extra apple slices

A sprinkle of cinnamon

Whipped cream (optional)

Instructions
 

Make the Crepes:

    - In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth. Let the batter rest for 30 minutes.

      - Heat a non-stick skillet over medium heat. Lightly grease it with cooking spray or a little butter.

        - Pour about 1/4 cup of crepe batter into the skillet, swirling to cover the bottom evenly. Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Flip and cook for an additional minute.

          - Remove from the skillet and repeat with the remaining batter, stacking the crepes on a plate. You should have about 12 crepes.

            Prepare the Apple Filling:

              - In a skillet over medium heat, melt the butter. Add the sliced apples, cinnamon, brown sugar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender. Remove from heat and let cool slightly.

                Make the Cream Filling:

                  - In a large mixing bowl, beat the heavy cream, powdered sugar, vanilla extract, and cinnamon together until stiff peaks form.

                    Assemble the Cake:

                      - Place one crepe on a serving plate. Spread a layer of cream filling on top, followed by a layer of the apple filling. Repeat with the remaining crepes, alternating cream and apple layers. Finish with a crepe layer and a generous spread of cream on top.

                        Chill and Serve:

                          - Refrigerate the crepe cake for at least an hour to set. Before serving, garnish with additional apple slices and a sprinkle of cinnamon. Optionally, add dollops of whipped cream for an extra touch.
