Apple Cheddar Quesadilla

2 large flour tortillas

1 cup sharp cheddar cheese, grated

1 medium apple (such as Granny Smith or Honeycrisp), cored and thinly sliced

2 tablespoons honey or maple syrup (optional)

1 teaspoon ground cinnamon (optional)

1 tablespoon butter or cooking oil

Salt and pepper to taste

Fresh cilantro or arugula for garnish (optional)

Prepare the Filling: In a bowl, mix the grated cheddar cheese and thin apple slices. If you’re using honey or maple syrup, drizzle it over the mixture for a touch of sweetness. Add the ground cinnamon if desired, and season with a little salt and pepper. Toss gently to combine.

    Heat the Pan: Place a non-stick skillet or frying pan over medium heat and add the butter or oil. Allow it to melt and coat the bottom of the pan evenly.

      Assemble the Quesadilla: Lay one tortilla flat in the heated skillet. Spoon half of the apple and cheese mixture onto one-half of the tortilla, fold the other half over to create a half-moon shape.

        Cook Until Crispy: Cook the quesadilla for about 3-4 minutes on one side, until golden and crispy. Carefully flip it over using a spatula, and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is golden brown.

          Repeat: Remove the quesadilla from the pan and let it cool slightly on a cutting board. Repeat the process with the second tortilla and the remaining filling.
