Air-Fryer Eggplant Parmesan Discs

Ingredients
  

1 large eggplant, sliced into 1/2-inch thick rounds

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 cup marinara sauce (store-bought or homemade)

1 1/2 cups shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Olive oil spray or extra virgin olive oil for drizzling

Fresh basil leaves for garnish (optional)

Prepping the Eggplant: Sprinkle the eggplant slices with salt and let them sit for 20-30 minutes. This helps draw out excess moisture and bitterness. After 30 minutes, rinse and pat them dry with paper towels.

    Set Up the Breading Station: In three separate shallow dishes, place the flour in one, the beaten eggs in the second, and a mixture of breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and pepper in the third.

      Bread the Eggplant: Dredge each eggplant slice first in the flour, shaking off excess, then dip into the beaten eggs, and finally coat well with the breadcrumb mixture. Make sure each slice is covered nicely.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
