2 garlic cloves, minced

1/4 cup fresh cilantro, chopped

1 large egg

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

For the BBQ Sauce:

1 cup BBQ sauce (store-bought or homemade)

1/2 cup crushed pineapple (canned, drained)

1 tablespoon soy sauce

1 tablespoon apple cider vinegar

1 teaspoon honey (or maple syrup for a vegan option)

For Garnish:

Fresh cilantro or parsley, chopped

Sesame seeds

Instructions

Prepare the Meatball Mixture: In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, cilantro, egg, smoked paprika, salt, pepper, and red pepper flakes (if using). Mix well until all ingredients are fully combined.

Form the Meatballs: Using your hands, shape the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them on a parchment-lined tray or plate as you shape them.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

Air Fry the Meatballs: Once preheated, carefully place the meatballs into the air fryer basket in a single layer, making sure they are not touching. You may need to cook them in batches depending on the size of your air fryer. Cook for 10-12 minutes, or until they are browned and cooked through, reaching an internal temperature of 165°F (74°C).

Prepare the BBQ Sauce: While the meatballs are cooking, combine BBQ sauce, crushed pineapple, soy sauce, apple cider vinegar, and honey in a small saucepan over medium heat. Stir and let it simmer for about 5-7 minutes until slightly thickened.

Toss the Meatballs: Once the meatballs are done cooking, remove them from the air fryer and place them in a large mixing bowl. Pour the BBQ sauce over the meatballs, tossing gently to ensure they are evenly coated.

Finalize: If desired, return the sauced meatballs back to the air fryer for an additional 2-3 minutes to caramelize the sauce slightly.

Serve: Remove the meatballs from the air fryer and garnish with fresh cilantro or parsley and sprinkle with sesame seeds. Serve warm as an appetizer or over rice for a delicious main course!
