Ingredients

1 medium pumpkin (about 2-3 lbs), peeled and diced

1 can (14 oz) coconut milk

2 tablespoons red curry paste

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper (any color), sliced

1 cup vegetable broth

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon coriander powder

½ teaspoon chili flakes (adjust to taste)

Salt to taste

Fresh cilantro, chopped (for garnish)

Cooked jasmine rice or quinoa (for serving)

Instructions

Prepare Ingredients: Start by peeling the pumpkin and chopping it into bite-sized cubes. Set aside.

Sauté Aromatics: In a large pot or skillet, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes.

Add Pumpkin and Spices: Stir in the diced pumpkin, red curry paste, turmeric, cumin, coriander, and chili flakes. Cook for an additional 2-3 minutes, allowing the spices to coat the pumpkin evenly.

Simmer with Liquid: Pour in the coconut milk and vegetable broth, followed by soy sauce. Stir everything to combine. Bring to a gentle simmer and let it cook uncovered for 15-20 minutes, or until the pumpkin is tender, stirring occasionally.

Incorporate Bell Pepper: About 5 minutes before the curry is done, add the sliced bell pepper to the pot. This will add extra texture and a pop of color to the dish.

Season and Adjust: Taste the curry and adjust the seasoning with salt and additional chili flakes if desired. The curry should be spicy with a rich, creamy texture.

Serve: Ladle the spicy pumpkin curry into bowls over a bed of cooked jasmine rice or quinoa. Garnish with fresh chopped cilantro for an extra burst of flavor.
