4 cups fresh corn kernels (about 6-8 ears of corn) or 3 cans of sweet corn (15 oz each), drained

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, diced (about 1 inch)

1 red bell pepper, diced

4 cups vegetable or chicken broth

1 cup heavy cream or coconut milk

2 tablespoons butter or olive oil

1 teaspoon smoked paprika

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Chopped scallions or fresh cilantro for garnish

Prepare the Corn: If using fresh corn, shuck the corn and use a sharp knife to slice the kernels off the cob. Set aside.

    Sauté Vegetables: In a large pot, heat the butter or olive oil over medium heat. Add the chopped onion and red bell pepper; sauté for about 3-4 minutes until softened. Add the minced garlic and sauté for another minute until fragrant.

      Add Potatoes and Corn: Stir in the diced potatoes and corn kernels. Cook for an additional 2-3 minutes to let the flavors meld.

        Pour in the Broth: Add the vegetable or chicken broth to the pot. Bring to a boil, then reduce the heat to a simmer. Cook for 10-15 minutes, or until the potatoes are tender.

          Season the Chowder: Stir in the smoked paprika, thyme, salt, and pepper. Adjust seasoning to your liking.

            Creamy Finish: Once potatoes are tender, remove about 2 cups of the chowder and blend until smooth using an immersion blender or a regular blender, then return it to the pot.
